Berry Healthy Parfaits Recipe
A great summer treat rather than ice cream, fresh fruit and yogurt.  Get a good dose of fresh fruit in a refreshing treat with very little work!
Prep Time:  5 min. Cook Time:  6 hrs Total Time:  6 hour 5 min.
Ingredients: Recipe Makes 2 Servings 1 cup plain yogurt 1/3 cup of old fashioned oats 1 tbs. agave nectar 2 tbs. almond milk (or milk of choice) ½ cup of blueberries ½ cup of strawberries

Did you know??? o Blueberries rank among the highest of any fruit for antioxidants, and one cup delivers 14% of the recommended daily does of fiber, and a quarter of the recommended daily intake of vitamin C! o Strawberries are high in antioxidants, polyphenols and contain many nutrients, vitamins, and minerals.  A few of these wonderful nutrients include potassium, manganese, dietary fiber, and magnesium, along with vitamin C. o Old fashioned Oats (NOT instant oats) are often considered one the the healthiest breakfast options in part due to all the fiber.  This high fiber is thought to help you feel full longer and reduce the amount of insulin released after meals.  They also are thought to include limiting oxidation of LDL (bad) cholesterol, decreasing total and LDL cholesterol, and reducing blood pressure.
Directions: 1. Mix the yogurt, oats, milk, and agave together in a small bowl.  2. Divide half of yogurt mixture equally between two 8 oz. canning jars (or other small containers).  Next, top the yogurt mixture with half of the fruit (strawberries & blueberries) into each container. Repeat with the remaining yogurt and fruit mixture. 3. Cover containers and refrigerate over night (or at least for 6 hours).
